These Octagonal Plates have gently raised sides, a flat surface and come in two sizes (8” and 5½”). Medium plates beautifully hold appetizers, sushi or a bagel. Small plates are perfect for condiments, otsumami (small nibbles that go with a drink), or paper clips for your work desk.

Kutani ware is a style of porcelain made in southern Ishikawa prefecture and is known for its boldly colored patterns. Kata Kutani is a line of original Kutani ware developed by a Kanazawa based lifestyle shop niguramu. The Kata Kutani collection eschews decorations and instead showcases the traditional shapes (kata) and the beauty of the glaze.

The porcelain claysourced in the area is naturally grey, and when fired with a white glaze it turns into beautiful light grey with a hint of celadon. The pieces in the Kata Kutani line use crackle glaze, which creates cracking effects (kan’nyū) on the finished surface, making them even more graceful.

A Note about Kan’nyū (Crackle Glaze) 

Because of the crackling effects, the dishes slowly absorb colors of the food and liquids over time. To minimize this we recommend "seasoning" the dishes before the first use. Dissolve 1 to 2 tablespoons of starch (flour, corn or potato starch etc.) in a pot of water deep enough to cover the entire dishes. Heat over medium heat until the water reaches a gentle boil. Turn off the heat and leave the dishes in the pot. Once the water is cool rinse the dishes throughly with water and dry. This process is called médomé and works for other ceramics, especially hand thrown wares that have porous surface.

Thereafter, before each use soak the dishes in water for a few minutes. After use, clean them in timely manner; do not leave the dirty dishes or keep them soaked in water for a long period of time. Even if you take a good care of the kan’nyū dishes, it is almost inevitable that over time the cracks absorb some colors. The Japanese enjoy this natural process and call it “raising dishes” as in raising children. We hope you, too, enjoy the unique beauty of the kan’nyū ware.

  • Occasional dark specks on the surface are iron contained in the clay and glaze. Their occurrence is natural and does not signify a defect.
